Coconut Citrus Chicken

Amanda shares this yummy crock-pot creation:

I enjoy reading and finding recipes to make – but I sometimes end up doing a little combination of sorts when I find a few good ones I like.  This one for example 😉

NOTE: I opt for organic when possible; I am chicken thigh kind of girl; I usually sear my chicken before placing in crock-pot.

Marinade:

Fresh squeezed citrus of lemon, lime, and oranges; garlic and I opted for thyme

4 hours minimum (I like to do mine overnight)

Preparation:

Bring marinated chicken to room temperature and then sear in a hot skillet w/ coconut oil.

Place seared chicken in crock-pot

1/2 cup to 1 cup of organic OJ or fresh squeezed

Juice of 2 lemons and limes

More fresh thyme

4 slices of grass-fed butter

Fresh lemons or oranges on top

Cook on low for 3-4 hours (depends on your crock-pot and thickness of chicken)

Add 1/2 cup canned coconut milk

Cook on high for about an hour – till it boils

Then back to low until chicken is done

I served with shavings of coconut on top

TIP: This broth is amazing!  So save it and then you can turn your leftovers in to a yummy soup.
